Fred, a Washburne Culinary Institute graduate, has worked at some of the best restaurants in the US. He started the Hey-Ha Food Truck with his sister in Austin, TX using old-world techniques like oil blanching, dehydrating, pickling and other preservation methods to showcase the Thai cuisine.
Now, back in Chicago, Fred is partnering with restaurants and chefs around the city to bring unique flavors to those with an open mind and adventurous palate.
